Before you buy a set of containers
Four things that decide whether a storage set is useful in a real Indian kitchen.
- Measure the shelf, not the box
- A set that fits the cupboard on paper still has to clear the shelf lip and the door hinge. Measure the internal depth and the height between shelves before ordering.
- Glass or plastic
- Glass does not take colour from turmeric or tomato and goes into an oven; it is heavier and cracks on a temperature jump. Plastic is lighter and cheaper and will stain with spiced food.
- Airtight or vented
- An airtight seal is what keeps flour and cereal dry through a humid month. A vented lid is for the fridge and the microwave. The two are not interchangeable, and the page says which one you are getting.
- Heat and dishwasher limits
- Where a maker states an oven, microwave or dishwasher limit we put it on the page. Where they state nothing we leave it blank instead of assuming, because a lid that warps is a lid that stops sealing.
